Ti Kuan Yin is one of the essential Chinese teas.  Ti Kuan Yin is an oolong made in southern Fujian Province in the area around Anxi City.  This tea is named after Kuan Yin, the only female deity in the Chinese pantheon of deities.  She is known as the Goddess of Mercy.  Ti, or iron, refers to the iron jars that were once used to store tea.  Hence, Iron Goddess of Mercy.  

The Anxi oolongs are ball-rolled teas instead of the Wuyi-style strip oolongs.  Ti Kuan Yins are generally oxidized less than 50%.  There are multiple styles of Ti Kuan Yin. This one is a fairly traditional style tea with nicely formed balls of dark green tea with attached stems.  

This tea should be steeped multiple times, each for a relatively short period of time.  The tea leaves will absorb water with each steeping, slowly swelling and opening until they are fully unfurled.  The flavor also changes a bit with each steeping, starting out relatively light and becoming more deep and rich and then finally returning to an aromatic, clear liquid.  The tea liquor is a fresh yellow-gold in the first few steeps. 

1 tsp. per cup.  Ste5-10 second, brew 5time plus, use boiling water only. in 200 degree water.
